The third annual Les Dames d’ Escoffier fundraiser for culinary scholarships will be held at the Texas Culinary Academy on Saturday, October 4, 2008 at 7pm. Part feast, part culinary demonstration, and all fun, this festive evening includes dine-around appetizers; a three-course, sit-down dinner; a selection of premier Texas wines; and a sumptuous dessert buffet prepared by some of Austin’s premier bakers, pastry chefs, and cheese mavens.  As guests dine at the chef’s tables in TCA’s state-of-the-art teaching kitchens, each course will be demonstrated and explained by some of Austin’s finest women chefs, including these dynamo duos and menus: Alma Alcocer-Thomas, executive chef of Jeffery’s & Kristine Kittrell executive chef of Stortini.: Chicken Liver and  Foie Gras Pate with Onion, Marmalade,Cornichons and Crostinis; Mushroom Creme Brulee with Balsamic Greens and Roasted Tomatoes; and Duck Breast on Butternut Squash Puree and Fig Mustarda. Teresa Wilson, chef/owner of Aquarelle & Denise Woods, chef/owner of Salado’s Friendship House: Raw Beet Ravioli filled with Westwind Jalapeno Goat Cheese, Sancerre Reduction, Yellow Beet Emulsion; Bibb and Cilantro Salad, Shrimp and Toasted Corn; Grilled Figs, Balsamic Vinaigrette, Walnuts; and Duo of Texas Breast of Quail, Confit and Spice Rub, Paglia E Fieno.  Popular Austin private chefs Gina Burchenal of Gina’s Kitchen and Pamela Nevarez of EatStreet Personal Chef Service:  Harvest Pot Pie with Garlic Mashed Potato Crust; Spinach Salad with Citrus Seared Shrimp and Goat Cheese Medallions; and Tuscan Rubbed Quail with Fresh Fettuccini and Wild Mushrooms in Port Reduction Sauce. Paired with each course will be Texas wines provided by Alamosa Wine Cellars, Texas Hills Vineyards, and Fall Creek Vineyards. The wineries’ co-owners Karen Johnson, Cathy Gilstrap, and Susan Auler will pour and discuss the wines, the wineries, and the pairings. “This is the third year we’ve showcased our members’ diverse talents in this venue, it’s a proved to be a unique experience for guests to interact in an intimate setting with the chefs, the winemakers, and other professional culinary women in Austin,” said Quincy Adams Erickson, who along with Paula Biehler, are this year’s Fundraising Co-Chairs.  Guests will receive copies of the recipes to take home, and the evening will include a silent auction with donations and gift certificates from local food businesses and restaurants, as well as a variety of culinary books and items.
